A delicious cake similar to something my grandmother makes, with spices and coffee.…lovely. Really easy to make too, it’s never gone wrong yet.
Ingredients:
2 Eggs
150 ml Brown sugar
100 ml Golden syrup
1/2 tsp Ground cloves
1 tsp Ground cinnamon
1 tsp Ground cardamom
1 tsp Ground ginger
150 ml melted butter
150 ml strong cold coffee
11/2 tsp Baking soda
450ml Plain flour
Method:
- Preheat oven to 175°C
- Grease a cake tin (my 25cm diameter one is a bit too big, so try a slightly smaller one)
- Beat together eggs and sugar until light and foamy
- Add syrup, spices, melted butter and coffee
- Mix together baking soda and flour, then add slowly to mixture
- Pour into cake tin and bake for 30–45 mins until dark brown
