A traditional Finnish dessert made from fresh berries. Serve with whipped cream or on its own.
Cooking time: 1 hour (but will take several hours to cool)

Ingredients:
- 1 litre water
- 300–400 ml (~250g) cranberries, cowberries, blackcurrants or other berries (fresh or frozen)
- 150-200ml sugar
- 4 tbs potato or cornstarch (cornflour will give you a cloudy end result)
- 100ml cold water
- pinch salt
Method:
- Combine the berries with 1 litre of water in a pot, bring to the boil.

- Simmer gently until berries soften and begin to break up.

- Remove from heat and pass through sieve, using a spoon to squeeze through as much as possible.

- Measure the juice.
- Return the juice to the pot, bring back to the boil and add 200ml of sugar for every litre of juice (you can vary this by taste).

- Add the pinch of salt to the juice.
- In a cup mix the potato starch with 100ml of cold water.
- Remove the juice from the heat.
- Pour the starch-water mix into the hot juice in a thin stream, mixing with a whisk as you do so.
- Return the pot to the heat and bring back to the boil.
- Taste to confirm sweetness, add sugar if needed.
- Pour into large serving bowl, sprinkle top with sugar and set aside to cool for 2 hours.
- Once cooled to room temperature place in fridge to cool further.
- Serve cold with whipped cream.
