A really easy recipe for a delicious tomato soup. Serve with croutons and some sour cream.
Serves 1 or 2
Cooking & Preparation time: ~1½ hours
Ingredients:
- 2 tins chopped tomato
- 1 Onion
- 3 cloves Garlic
- 1 Carrot
- 1 stick Celery
- 1 Bay leaf
- Small bunch of fresh Thyme
- Olive Oil
- Salt & Pepper
- Sour Cream to serve
Method:
- Slice all the vegetables very thinly.
- Heat some olive oil in a pan, once hot fry the onions until they begin to go brown.

- Add the rest of the vegetables and fry for about 5 mins.

- Add the tinned tomato, bay leaf and thyme, cover pan with lid and simmer on medium heat for 45mins.

- Pour into a sieve and use the back of a spoon to squeeze out as much liquid as possible.

- Return the sieved soup back to the pan and simmer for a further 15 mins.
- Add salt and pepper to taste.
- Serve with sour cream and crusty bread.
