Quick, simple pasta recipe, you can replace the basil with rocket or spinach if you prefer.

Ingredients:
400g Prawns
1 glass White wine
3 tbs Tomato puree
1 Onion
3 cloves Garlic
handfull Fresh Basil
Olive oil
Salt & Black pepper to taste
250 g Tagliatelle or spaghetti
Method:
- Finely chop the onion and garlic

- In a large pot boil the water for the pasta
- While waiting for the water to boil heat a frying pan until very hot, then with a little oil quickly fry the prawns (no more than 3 mins)

- Remove the prawns from the pan and set aside
- Fry the onions and garlic until soft and beginning to brown

- Add the tomato puree and the wine to the onions, cook for 5 mins or until the sauce begins to thicken

- When the pot of water boils add the pasta and some salt and cook until al-dente
- Roughly chop the basil, when the pasta is done, add the basil and the prawns to the sauce

- Season with salt and pepper, then mix with pasta, serve with parmesan cheese
