A quick and simple way of making the perfect fluffy rice, with out the need for a rice cooker
Thanks to my friend Matt for teaching me the idea on this one.
Ingredients:
Rice
Water
Method:
1. Place 1 part rice to 1 1/2 parts water (e.g. 1 cup rice to 1 1/2 cups of water) in a pot.
2. Bring to the boil stirring occasionally.
3. Turn off the heat and cover the rice, leaving the pot on the cooling hob.
4. Leave for 20min (do not stir).
5. After cooking the rice should look like this, with numerous air holes in the rice.
6. Tip into a seive and rince with copious boiling water. 
Alternatives:
- (After step 2) Add 1 tsp of tumeric per cup of rice to give a beautifully yellow coloured rice.
- (After step 2) Add a few cardamom pods, some whole cloves, cinnamon and a bay leaf to make pilau rice.
